The owners of Cookies and Creme Jax Beach are preparing to open a new food truck called Cookies and Creme on Wheels in Jacksonville Beach.

The company specializes in late-night made-from-scratch cookies and ice cream sandwiches and operates from a brick-and-mortar at 241 13th Avenue North at Jacksonville Beach. Now, the owners are getting ready to launch a food truck after it was recently approved by the Florida Department of Business & Professional Regulation. Co-owner Jen Enzenbacher tells What Now Jacksonville that she will run the shop while her husband, Ray, will operate the food truck, expected to launch by the end of the month.

In addition to serving build-your-own cookie ice cream sandwiches made with homemade cookies and ice cream made in-house daily, customers can purchase the cookies and ice cream flavors individually. Some available cookies include Beaches Best Chocolate Chip, Tutti Fruity Pebble, Unstuffed Oreo, Funfetti, and more. On Wednesdays, the eatery offers a handful of milkshakes with six pre-made flavors and the ability to create your own.

“We are a local, veteran, and family-owned LATE NIGHT cookie bakery in Jacksonville Beach, Florida,” according to the company’s website. “Husband and wife team Ray and Jen Enzenbacher bake various fresh cookies throughout the day AND make their own ice cream for everyone to enjoy and eventually crave!!!! We specialize in handcrafting build-your-own cookie ice cream sandwiches. We offer Vegan (non-dairy) and gluten-free cookie and ice cream options.”
