After working with many great chefs, Azofeifa launched his own business, El Cubano JAX, during the pandemic as a hot dog cart vendor for different bars and breweries. Eventually, the chef hosted pop-ups before opening a brick-and-mortar shop inside Lemonstreet Brewing Company. Azofeifa recently told First Coast News that he is exiting from Lemonstreet on December 1 to focus on his next venture, a new food truck called SUBpreme Jax.

“The time has come that we must say goodbye to El Cubano Jax inside of Lemonstreet Brewery,” according to a post from the El Cubano Jax Facebook page. “This is not goodbye, just a simple see you next year as we prepare to open up our new food truck, SUBpreme JAX. As for El Cubano Jax, we want to thank each and every one of you who has supported us over these past three almost four years. Before you know it, you will be able to find Chef Esteban all over town once again, but this time he’s going to be on wheels, and his menu is going to be SubPreme! El Cubano Jax maybe retiring, but our sandwiches are not! You will be able to still find all of your favorites on the food truck.”

SUBpreme Jax is expected to have a soft opening in a few weeks, with a grand opening planned for January 5, 2024. The new food truck will offer a handful of classics from El Cubano Jax, such as the Cuban, roast beef, jackfruit Cuban, and more. The full menu and website are currently being finalized. In the meantime, Azofeifa is still offering catering options for events.
