Jackson’s Turkey & More, a Gainesville-based pop-up, is getting ready to upgrade to a food truck in the area.

Owners Adrian Miller recently submitted a plan review application to the Florida Department of Business & Professional Regulation to open a food truck in Gainesville. Once plans are approved, Miller will offer his mouth-watering smoked BBQ throughout Northeast Florida. There is no exact timeline for the food truck opening, but it will be within the next few weeks, pending approval. Until then, the company will continue to host pop-ups throughout Gainesville.

When the new food truck opens, customers can expect a variety of different meat options, such as turkey legs, pulled pork, ribs, wings, rib tips, and the recently added rib tip/ pulled pork snack bowl. The eatery also offers various sides, such as mac and cheese, collard greens, dirty rice, and more. Jackson’s Turkey & More often serves High Springs, Alachua, Gainesville, Ft. White, and more through pop-ups that often sell out before closing. Now, the owners can expand the brand beyond its regular pop-ups.

“Many people have asked us, “Why is the name of your company JACKSONS Turkey and more?” Well, it’s because of my dad, Rev. Sidney R. Jackson!” the company recently shared on social media. “This man taught me at a young age of ten years old how to grill/smoke/ fry turkeys‼️ He taught me the difference between the three and how to use the equipment. If only he could see it now! I know he would be proud!”
